Bruising the Mint
As you can see, I haven't gotten very far yet in the recipe.....posting every half hour really isn't as easy as one might think!
So,my mint was quite dirty, so after I took it off the stems, I had to give it a good dip in some water and then a spin in my salad thinga-ma-jig. It's now dry and is in the process of being bruised....bruising it brings out the aroma and flavor a bit more. I'm using the top part of my mortar and pestle to give it all a little grind.
